If you're looking to replay a level to earn more stars, or simply challenge your own high score, you can do so my tapping on the venue of your choice to bring up the Level Select screen.
For example, you can tap on The Greasy Spoon Diner as shown below:
And you'll be presented with the level select screen for Venue 1. You can either scroll or use the arrows to navigate between chapters, as well as access the upgrade Shop by tapping on the blue Shop icon in the bottom left corner:
